Mushroom Recipes Your Family Will Love

In today’s post, Stan Tekiela, author of Start Mushrooming, shares with us two mushroom recipes. Mushrooms are delicious, and you should give these a try!

Morel Honey-Mustard Chicken

INGREDIENTS

2 cups fresh morel mushrooms or 1 cup dried morels
2 tablespoons butter
4 tablespoons Dijon-style mustard
2 tablespoons honey
dash celery salt
dash sweet basil
salt
black pepper
2 boneless, skinless chicken breasts

DIRECTIONS

If using dried mushrooms, rehydrate them in warm water for 30 minutes or until soft (see below on how to rehydrate mushrooms). Drain well. Slice mushrooms into strips and sauté in butter. Set aside.

Preheat oven to 375°.

Whisk together mustard, honey, and seasonings in a bowl. Coat both sides of chicken with honey-mustard sauce.

Bake for 20 minutes or until chicken is thoroughly cooked.

Smother in morel mushrooms. Serves 2.

Mushroom-Nut Pilaf

INGREDIENTS

2 cups fresh sulfur shelf mushrooms or
1 cup dried sulfur shelf mushrooms
1 clove garlic, crushed and chopped
5 scallions, chopped
1⁄4 cup chopped walnuts
1⁄4 cup chopped or slivered almonds
2 tablespoons olive oil
2 cups brown or wild rice
black pepper to taste
dash Tabasco sauce

DIRECTIONS

If using dried mushrooms, rehydrate them in warm water for 30 minutes or until soft (see below on how to rehydrate mushrooms). Drain well. Sauté mushrooms, garlic, scallions, and nuts in olive oil.

Prepare rice according to package directions. Toss mushroom mixture and rice together. Season with black pepper and Tabasco sauce.

Serves 2–4.

HOW TO REHYDRATE MUSHROOMS

All dried mushrooms are rehydrated in the same way. Place the mushrooms to be rehydrated in a medium-size bowl. Add enough warm water to cover the mushrooms. Use warm, not hot, water. Let stand for up to 30 minutes. Small pieces will rehydrate faster than larger ones, so keep an eye on the process. You can test for proper moisture by squeezing. Each piece should be soft and pliable. Squeeze out excess water before cooking.

Try using chicken or vegetable broth instead of water for extra flavor when rehydrating. If you use water, save it and use as a substitute in any recipe that calls for chicken broth or vegetable broth.
